Professor Chen Guoxun from Huazhong Agricultural University (HZAU) was included among the inaugural class of Excellence in Nutrition Fellows of the American Society for Nutrition in 2025.

Professor Chen, who joined HZAU in 2023, currently holds positions as a professor and doctoral supervisor in the College of Food Science & Technology and the College of Biomedicine & Health. Previously, he served as a faculty member at the University of Tennessee in the United States for 27 years, focusing his research on chronic metabolic diseases, phytochemicals, and bioactive compounds. He spearheaded investigations into the intricate relationship between vitamin A and lipid metabolism, obesity, and diabetes, elucidating their molecular mechanisms for the first time.
Upon assuming his role at Huazhong Agricultural University, Professor Chen initiated the formulation of local standards for Artemisia argyi food products.
With over 100 SCI publications to his credit and the successful acquisition of funding for 17 projects in both the United States and China, his scholarly contributions have been widely recognized. Additionally, he is editor-in-chief for the periodical Food, Nutrition and Health and serves as an associate editor for more than 20 SCI journals, including Food Science and Human Wellness and Journal of Future Food.
